Roasted Butternut Squash Salad with Warm Cider Vinegrette

Try this seasonal delectable combination of warm cubed butternut squash with cool arugula in a sweet and sour dressing. Walnuts thrown in make for an explosion of flavor and texture. The results are well worth the effort.
