Oven Roasted Sweet Potatoes with Caramelized Onions

This will yield 4-6 servings depending on portion size and can be served at room temperature. The sweetness of the onion and sweet potatoes are intensified with the roasting a real treat!
Ingredients
- 2 large sweet potatoes – washed, blemishes removed. Do not peel
- ½ cup olive oil
- coarse grind Kosher or Sea Salt
- fresh ground pepper
- 2 large thin sliced onion
Directions
- Cut sweet potatoes into thick wedge – approximately 6-8 pieces per potato
- Place potatoes in a bowl, add olive oil, salt, and pepper (to taste).
- Coat potatoes with oil mixture.
- Add thin sliced onions (we like alot of onions so you can omit or reduce the amount to taste).
- Toss mixture to coat onions with oil and combine.
- Place on a prepared sheet pan, spread evenly so potatoes do not overlap to allow even cooking.
- Roast in oven at 400 degrees for 20 minutes, turn potatoes and onions to promote browning and bake for another 20 minutes. Test for doneness.
