Oven Roasted Sweet Potatoes with Caramelized Onions

(served at the feast day celebration of St. Cecilia November 19)

This will yield 4-6 servings depending on portion size and can be served at room temperature.  The sweetness of the onion and sweet potatoes are intensified with the roasting a real treat!

Ingredients

  • 2 large sweet potatoes – washed, blemishes removed.  Do not peel
  • ½ cup olive oil
  • coarse grind Kosher or Sea Salt
  • fresh ground pepper
  • 2 large thin sliced onion

Directions

  1. Cut sweet potatoes into thick wedge – approximately 6-8 pieces per potato
  2. Place potatoes in a bowl, add olive oil, salt, and pepper (to taste).
  3. Coat potatoes with oil mixture.
  4. Add thin sliced onions (we like alot of onions so you can omit or reduce the amount to   taste).
  5. Toss mixture to coat onions with oil and combine.
  6. Place on a prepared sheet pan, spread evenly so potatoes do not overlap to allow even cooking.
  7. Roast in oven at 400 degrees for 20 minutes, turn potatoes and onions to promote browning and bake for another 20 minutes.  Test for doneness.
